Soup and Swallow: Why We Always Put Them Together First

If you've ever built a plate with us, you'll have noticed Soup and Swallow are the first two categories you see — not Rice, not Protein, not Drinks. That's not an accident of how the menu happened to get typed up. It's the one pairing that decides almost everything else about a plate.

In Nigerian home cooking, the soup usually comes first in your head, and the swallow follows from it. Egusi wants company. Ogbono wants company. What you're in the mood for on a given day is really a soup decision, and the swallow is the answer to that decision, not the other way around. So when we built our ordering system, we put the two side by side at the very top, instead of scattering them across separate sections the way a lot of menus do.

Everything after Soup and Swallow in our category order — Rice, Pasta, Noodles, Beans, Chips, Breakfast — is grouped as its own thing next, and Protein, Sides, and Drinks come last, because those work as add-ons to almost anything you've already picked, not as the decision itself. It's a small piece of structure, but it's the reason building a plate with us tends to feel quick: the menu follows the order you actually think in, not an alphabetical or a kitchen-workflow order that makes sense to us but not to you.

None of this is a recipe post in the strict sense — we're not publishing exact quantities or techniques here. It's more the "why" behind how the menu is shaped, which is its own kind of behind-the-scenes.
