Which Soup Goes Best With Which Swallow?
There's no single correct answer here, this is general Nigerian food tradition, built up over generations of home kitchens, not a rule GrubNmore invented. But if you're new to ordering Soup and Swallow, or just want a starting point, here's how each of our 5 soups is traditionally paired.
Egusi Soup
Rich and thick, made from ground melon seeds. Because it's on the heavier side, it's most often reached for with a sturdier swallow like Pounded Yam or Fufu, though Eba works just as well if that's what you have on hand.
Ogbono Soup
A classic "draw" soup, smooth and a little stretchy. It's a favourite with Eba specifically, since the two textures play off each other well, but it's just as at home with Fufu or Semo.
Afang Soup
A hearty, leafy soup with real body to it. Its thickness makes it a natural match for Fufu or Pounded Yam, swallows that can stand up to a soup with this much going on.
Okra Soup
Another draw soup, lighter than Ogbono. Semo and Eba are the most common pairings, though like most of the soups on this list, it really comes down to personal preference.
Vegetable Soup
The most versatile of the five. It's lighter than the others, so it genuinely works well with whichever swallow you're in the mood for that day.
